Kowboy Kitchen 6th Edition

 

We have a special treat for you this week. Lonestarstruck's very own staff writer and Kelly's sweetheart, JOE DECARO has provided all of today's menu.
  What could be better for Monday night's game than Buffalo Wings huh?

  

ULTIMATE MACARONI SALAD
Ingredients
1 lb cooked elbow macaroni
2 tablespoons vegetable oil
1 can of solid white tuna (break it up with a fork)
4 hard-boiled eggs (chopped)
1/3 cup diced red or green bell peppers
1/3 cup sliced black Lindsay olives
1/3 cup diced celery
3/4 cup mayonnaise
salt and pepper to taste
Don't overcook the macaroni and immediately cool under cold running water after draining and toss with vegetable oil to prevent sticking.
Combine the macaroni with all the other ingredients until everything is coated with mayonnaise. Cover and keep refrigerated for at least one hour before serving so that all the flavors combine. Garnish with parsley or grated carrot.
Serves 12-15 people.
CLASSIC STYLE BUFFALO WINGS
Ingredients
2 lbs chicken wings cut into wingettes
2 cups seasoned flour - flour, salt and pepper
1/2 cup Frank's Red Hot Sauce
1/3 cup of melted butter
1 cup of blue cheese dressing
2 dozen celery sticks
Clean and pat dry your chicken wings. Dust all the wings gently with the flour and then place them in a shallow roasting pan and bake at 400 degrees for about 45 minutes.
While your wings are cooking, combine the Frank's Red Hot sauce and butter in a pan and heat through.
When your wings are ready take them out and drain any fat from the roasting pan. Place the wings back in and toss with the Hot Sauce and butter mixture. Make sure everything is coated. Cover with foil and bake them an additional 15 minutes until ready.
Serve your wings on a platter with your blue cheese dressing and celery sticks on the side.
Serves 10-12 people.
MARINATED STRAWBERRIES AND BANANAS 
Yum Yum Yum!
Ingredients
2 quarts of fresh strawberries sliced
5 medium sized bananas sliced
5 medium sized oranges
1 tablespoon lemon or lime juice
3 tablespoons of sugar
fresh spearmint leaves for garnish
whipped cream
Take your sliced strawberries and place them in a bowl and toss with sugar. This will begin to make them softer and juicier.
Toss the sliced bananas with lemon juice to prevent browning and then add into the bowl with the strawberries.
Cut the oranges in half and squeeze the juice of each half into the bowl over the strawberries and bananas.
Mix well and refrigerate for at least one our so that the flavors combine.
Serve in small individual bowls with a dollop of whipped cream and sprig of spearmint.
Serves 10-12 people
