MY MOST SINCERE APOLOGIES FOR BEING A DAY LATE ON THIS!

 

Fajitas for your tailgating party. They don't know anything about fajitas up in New England!

 

STEAK FAJITAS  by Sandy Sheahan

Ingredients

6 oz flank steak
1 small onion, cut into eighths
1 green or red bell pepper,
1 small jalapeño pepper, cut into rings
1 tsp olive oil
1 Tbsp chopped cilantro
1/8 tsp cinnamon
1/4 tsp cumin
salt and pepper to taste

Preparation

Cut the meat diagonally and across the grain into thin strips. Place it in a large ziplock bag with all the other ingredients and shake well to combine. Dump the mixture into a skillet that's been preheated over medium-high heat. Cook, turning frequently, for 5 to 6 minutes, or until the meat reaches the desired doneness. Serve with 4 whole-wheat tortillas and salsa.

 

ARMADILLO EGGS by DirtyBird (from CP)

1 dozen medium to large Jalepenos
1 medium size Philly Cheese
1 package sliced bacon
Small amount of Sauage or Hamburger meat
Toothpicks

Instructions :
Take the peppers and cut the stem end off. Then use a small knife or a potato peeler to hollow out the peppers.Wash out peppers and set aside.Take the Philly Cheese and stuff the Jalepenos about 3/4 full and plug the ends with either sauage or HB meat.Use a whole strip of bacon and wrap the pepper starting end to end and finishing round and round. Secure bacon with toothpick through pepper.

Cooking:
In oven .... arrange peppers in large pyrex baking dish and bake at 350 degrees until peppers are soft... about 1 hour

Grill ...... use foil pan or wrap in aluminum foil ... cook until pepers are soft ....

 

FABULOUS FUDGE by Liz Cole

1 c. butter
1 c. milk
4 c. sugar
25 large marshmallows
2 oz. unsweetened chocolate
11 1/2 oz. milk chocolate chips
12 oz. semi-sweet chocolate chips
1 c. chopped nuts (optional)

Heat butter, milk, & sugar until butter melts. Then
add marshmallows and mix until melted and mixture
starts bubbling a little. Add remaining ingredients;
stir well. Pour into a 9" x 13" butter pan and cool.
Best to let fudge sit 12 - 24 hours before cutting.
